One of a TRIO of very special wines made from Palomino Fino, yet vinified like a white wine (not a Manzanilla). The Callejuela brothers are crafting incredibly limited “Vinos de Parcelas” (or single vineyard wines) showing the maximum expression, the personality and the richness of nuances of the various terroirs of the area. This is from the vineyard Las Mercedes, with 8.5 hectares, located in the farm Pago Añina, at 83 metres of altitude, planted on albariza soils.
The harvest is carried out by hand. After the fermentation, this wine is aged for 7 months in manzanillo butts under the yeast cap (velo flor). More structured than the other 2 wines in this series, more “vinous” with a full-bodied mouth-feel, white fruits, grass/camomile and dried flowers all intermix to make this a complex and layered wine perfect for a roasted sea bass with tarragon and clams in a wine-based broth.
