Nose: It has a big nose as you would expect (oloroso literally means “odorous”) with that “here comes sweetness” aroma of caramel and burnt cake.
Palate: Full-bodied, deep and rich but light and alive. Not an oily style, but much denser and commanding. The amount of racing acidity and savory umami pheromones are almost unparalleled. This sherry is incredibly excellent!
Vinification: Aged for 25 years, bottled with only a slight filtration.
Recommended Food Pairing: Duck confit, rillettes, or your lover’s neck. The quintessential "Nightstand Nipper."
