Nose: Clean. Pronounced. Toasted aromas, sweet raisins, fig bread & dates. Hints of prunes with toasted nuts.
Palate: Dry. Full bodied with great toasted quality & subtle, complex spice notes. Starts sweet, nutty & bittersweet but has tangy acidity and a roasted, toasty & long finish.
Vinification: An exceptionally old sherry, made from a solera dating back to 1842. On average, the wines are 20 years old. Produced in a traditional method, with a small amount of PX added for balance & to soften the older wines concentration; making it palatable.
Recommended Food Pairing: Dark chocolate or blue cheese.
