Terroir Sense Fronteres is the new project from Dominick Huber, founder of Terroir Al Límit. All of his vineyards are farmed organically or biodynamically on calcareous and clay terroirs within the mountains and valleys of the D.O. Montsant. Grapes are foot trodden and fermented whole cluster with native yeasts and in stainless, amphorae, or concrete.
The grapes are only macerated for 10 days and then pressed off leaving fresher and lower alcohol than typical Montsants. Aged in stainless for six months before bottling. Pure and elegant with fine tannins with a balance of spices and herbs. Serve cool, and with a roasted pork loin.
