  • After apprenticing and learning the tricks of cider making in the Basque Region of Spain, Jasper Smith returned to the Columbia River Gorge of Oregon, USA to give it a go. Meticulously blending a combination of indegenious apples for acidity, tannin, and sweetness, all the juice is brought together to make this tart and funky cider, bottled unfiltered, and remarkably like the natural sidra we love from Northern Spain. A little bit of bubble and a lot of fun to drink. Try with one of our favorite pairings - slow caramelized onions on top of an aged white cheddar for a grilled cheese sandwich out of this world!
