The Saó del Coster team works traditionally and follows a minimum intervention philosophy in terms of agriculture as well as winemaking, respects nature’s cycles, uses biodynamic treatments in its lands and animal traction and the moon calendar for all of the work in the vineyards as well as the cellar. The S is a blend of organic Grenache and Carignan on granitic and slate soils. Autochthonous (indigenous) yeasts, partially fermented with stems, aged 12 months in stainless steel tanks. Unfiltered, low sulfur.
Medium-bodied and balanced with some deep cherry and that typical mediterranean garrigue, with fine minerals and a fresh bust of acidity on the finish to keep things bright. Easily served with a light chill and with some lamb sliders with melted fontina cheese. Only 20,000 bottles produced.
