Nose: Intense, dried hay, yeast & bread dough, sea air and chamomile.
Palate: Pronounced & dry. With great texture, very complex and bold with saltiness and an incredibly lengthy finish.
Vinification: Antonio Barbadillo Mateos launched his own project in 2010, after having grown up and worked in the family estate for several decades. A selection of old soleras aged for 8 to 10 years under flor and bottled en rama, without filtration. Only 150 Magnums produced with this first release.
Recommended Food Pairing: Fried artichokes, anything from the ocean, & of course Jamon.
