Rubén Díaz Sierra de Gredos Cebreros "Fiorella" Albillo Real
Calling all lovers of Jura whites, Fino/Manzanilla Sherry, or lower-acid Lopez de Heredia Tondonia white wines! 100% Albillo Real from 70-year-old vines planted on decomposed granitic sands in Cebreros in the Gredos. Fiorel-la (a nickname for “little flor”) fermented 5 days on its skins and then aged under flor (the veil of yeast that protects the wine from oxidization) in stainless steel for over 18 months (a portion of Fiorel-la is aged in small soleras for Rubén’s vinos de tonel).
What's it like? A little orange-y colored, hazy, not filtered or fined. Naturally and organically grown, with no additives in the cellar. Crushed almonds, dehydrated orange peels, and a hint of bitterness on the finish. A great pairing for fatty fish like Mackerel with a Romesco sauce, or a clam pasta with sun-dried tomatoes and plenty of fresh herbs.
