    Appearance: Clean. Brilliant ruby with a maroon rim.

    Nose: Clean. Medium (+) intense. Subtle red fruit with balsamic & mineral notes.

    Palate: Dry. Medium bodied with vibrant acidity, depth of flavor & a complex, long finish.

    Vinification: From a single-vineyard of pre-phylloxera vines located in Valtuille de Abajo, 600 meters above sea level with sandy-calcareous soils whose slopes face south. Fermented in a 700-liter barrel with 40-60 days of maceration. Aged 16 months in 228-liter barrique before being bottled unfined & unfiltered.

    Recommended Food Pairing: Roasted guinea hen with whole-grain mustard & herbs.
