Nose: Clean. Medium (+) intense cherry aromas with balsamic notes & good minerality.
Palate: Dry. Medium-bodied with elegant, fresh red fruit, vibrant acidity & a long, complex finish.
Vinification: From a single vineyard of pre-phylloxera vines planted in sandy soil, almost 600 meters above sea level in the village of Valtuille. Fermented in chestnut vats, whole cluster with indigenous yeast, with a maceration period of 60-90 days. Aged one year in neutral barrels before being bottled unfined & unfiltered.
Recommended Food Pairing: Roasted guinea fowl breast with balsamic glazed chicory, walnuts and bacon.
