Parés Baltà is a tiny, top end winery, founded in the 1930s in an area that has been producing wine since the 1700s. The family-owned winery produces Cavas, and still red and white wines. Espigol is 100% Malvasia de Sitges cultivated applying Organic and Biodynamic farming. The wine is not aged in barrels, it is left with fine lees in stainless for 5 months. Best enjoyed with a salad of tropical fruits and citrus, seafood, fish.
