Varieties: Xarello & Bastarda Negre.

Appearance: Clear golden, with perfect bubble stream.

Nose: Fresh, with white flowers and a touch of minerality.

Palate: It's long and focused with superb acidity and precision for a wine sparkling wine this old. Flavors of green apple, melon, white flowers and a hint of petrol and brioche. Pretty amazing stuff.

Vinification: A single parcel planted in 1954 farmed organically and biodynamically by Pepe Raventos himself in this new project that began in 2005. Aged for 100 months (8 years) on its lees and bottled with zero dosage. No sulfites or additives are ever used. One of the very top sparkling wines made in Spain! Only 2735 bottles produced and less than 100 bottles came to the US.

Recommended Food Pairing: Sturgeon caviar with someone that you love.
