Nose: Yellow flowers & rosemary, telltale honeyed aromas as well as notes of dried straw and maritime scents.
Palate: Complex with creamy notes of honey & yellow peach; wax, flowers & yellow fruit as well as nuances from bottle aging.
Vinification: From 30 year old vines, grown on the calm side of a mountain, protected from sun & wind. Aged 4 months in French oak, 30 months in bottle. This may be the only, if not one of the very few, Chenin Blancs from Spain.
Recommended Food Pairing: Pair with cow’s milk cheese.
