Varieties: Produced from a number of different, native Basque apple varieties.

Appearance: Clear. Lemon yellow in color.

Nose: Clean. Medium intense citrus & green apple with a subtle wood note.

Palate: Dry. Medium-bodied. Fruit-driven with zesty, green apple notes & pleasant sour, brett & barnyard.

Vinification: Produced using traditional methods, without the addition of sugars, carbonic acid or sulfites. Fermented & aged in large oak barrels then bottled unfiltered.

Recommended Food Pairing: Scallops in a lemon-butter sauce.
