Eulogio Pomares (the winemaker behind Zarate) and his wife Rebeca Montero are behind the wheel at this small side-project, Fento. This blend is made with organically farmed grapes (69% Albarino, 22% Treixadura, 8% Loureiro, and 1% Torrentes) from micro vineyards spotted throughout the Condado de Tea subzone of Rías Baixas. Hand-harvested, natural yeasts, and aged in stainless steel. The wine is incredibly layered - floral, citrus, lime zest, minerals, and a lenthy pithy type finish. Perfect alternative to a nicer-style Sauv Blanc, and also delightful with a roasted chicken with lemon-orzo on the side.
