Palate: Incredibly lean, lithe, compared to most other white Priorats (due to that white Carignan). Some citrus pits, white flowers, saline-minerality, and a touch of tropical aspects, but very dry.
Vinification: Ester Nin is one of those household names that you should know and follow. Formerly working at Clos Erasmus with Daphne Glorian, now combined with her husband, Carles Ortiz, they are making biodynamic, small production and incredibly precise wines in Priorat. This is hand harvested, 24 hour pre-fermentation maceration, natural yeast fermentation in amphorae. 6 months in amphorae, then 3 months in 225L French oak barrels. Certified organic (CCPAE) and biodynamic (La Renaissance des Appellations).
Recommended Food Pairing: Herb-rubbed poultry (think, Thanksgiving Turkey), or with roasted root vegetables and pork loin. Mackerel or other strong white fish would also be nice.
