Nose: Clean, pronounced. A saline-minerality with a touch of toast.
Palate: Dry, medium (+) bodied, with outstanding acidity and power. This wine captivates your attention and the finish is long and incredibly complex.
Vinification: 40-65 year old vines crafted by Xarello master, Enric Soler, grown in calcareous clay soil. Incredibly expressive, almost Burgundian in spirit, yet from a warmer place. Hinting at notes of yellow fruits, savory notes keep it in balance, and some refinement with time in older French oak barrel and concrete egg (8-9 months). The freshness is outstanding, and the tiniest kiss of oak keeps the massive amount of Chablis-like acidity in check. A knock-out wine and incredibly limited!
Recommended Food Pairing: Grilled shrimp with a garlic butter sauce.
