Doniene Gorrondona was one of three original pioneers in the revival of txakolina production near Bilbao, with the creation of the Bizkaiko Txakolina DO in 1994. Using only 100% Hondarrabi Zuri for this still-style Txakoli, they ferment with only native yeasts in stainless steel and produce a very mineral-driven, clean, salty white with a slightly floral aroma. Perfect with all sorts of shellfish, shrimp, or crab legs. You can literally taste the Bay of Biscay in every sip. Also one of thier most rare wines to find!
