Varieties: 95% Tempranillo and 5% Cabernet Sauvignon.
Appearance: Deeply opaque ruby.
Nose: Very pronounced notes of ripe plum, red berries, a touch of vanilla.
Palate: Ripeness is tempered by grip with soft tannins. A supple, deeply fruity yet elegant style that deftly layers oak spice and fruit.
Vinification: Viticulture is 100% organic. Grapes are harvested and sorted by hand into gravity flow process in temperature controlled tanks with spontaneous fermentation via native yeasts. Bottled without clarification treatments, filtration or cold-stabilization. Aged in French oak for 6 months. This is the kind of wine that drinks much fancier than its price!
Recommended Food Pairing: Silky smooth enough to drink on its own, but also rich enough to withstand veal meatballs in a hearty sauce, ribeyes on the grill, or a very cheesy homemade lasagne.
