Dehesa del Carrizal is a Vino de Pago from Spain. This is the highest category on the quality scale of Spanish wines and means that in addition to having a proven track record of consistent quality, the wines have to be both produced from estate-grown grapes and also have to be processed and aged in a winery (bodega) located on the estate. At the current moment there are only 14 wineries in all of Spain with this designation.
This is 100% Syrah fermented in tanks followed by malolactic fermentation in new French oak barrels. Aged one year in the rows of French oak barrels and 18 months in the bottle before being released. Deep dark ruby hued. A mix of ripe fruit jam, black olive and toasted notes. Mouth-filling, big and robust while still being incredibly elegant and smooth on the finish. Great with lamb, duck breast, braised beef shanks and strong aged cheeses.
