Appearance: Clear, hazy daffodil hued. Some noticeable skin-contact.
Nose: Clean, softly aromatic with a mild fino-esque note.
Palate: Clean, medium-light and mild, with soft saline-notes and a gentle nuttyness similar to a fino. Juicy in a pleasant way, and could definitely age for a few years to come.
Vinification: Laura Lorenzo, ex-winemaker and viticulturist at Dominio do Bibei, and now owner/winemaker with her own small operation Daterra Viticultores since 2013. Very old vines farmed organically at a variety of elevations, expositions, and soil types in the Val do Bibei. Fermented for a week on the skins, then aged in used oak for nine months. This is the wine Lorenzo is most excited about that she handcrafts in Galicia. Only 3,965 bottle production!
Recommended Food Pairing: Creamy fondue, or melted tetilla cheese on potatoes. Also with grilled white-fish and asparagus.
