Variety: Garnacha

Nose: Clean. Medium intense. Wildly aromatic with berries, spice, and earth.

Palate: Dry. Full-bodied & smooth with well-rounded acidity & tannins.

Vinification: Biodynamic. A tiny 1ha parcel of 70-year old Garnacha vines planted 900 mt above sea level on schist and slate soils. Hand harvested, natural yeast fermentation in open vats, whole cluster, pigeage. 16 months in 500L French oak barrels

Recommended Food Pairing: Grilled meats, braised rabbit, oxtail stew, and pork loin.
