Managed by the Pérez Ovejero family in Porrera where they have vineyards that are mostly over 70 years old, planted on rough terrain with steep slopes and very low yields. There are a total of 54 hectares of vineyard, cared for by 15 winegrowers of the area for this special cooperative project. Harvests are all manual, and this wine is made with Garnacha Blanca, Picapoll, Pedro Ximénez and Macabeu. Half of them ferment in cement vats and the other half, in new barrels. After the fermentation, this wine is aged for 9 months in cement vats and an other part, in 54-liter glass demijohns. The wine is a perfect balance of Mediterranean soul and classic refreshment. Not one of those clunky Garnacha Blancas, this is much more elevated and clean. Pairs nicely with seared duck breast, or a flavorful pesto with plenty of garlic and (good) olive oil.
