Vinification: Biodynamic farming and hand-harvested. 80 year old Macabeu vines & 25 year old Chardonnay vines from chalky-silty soils with some clay. 15% of the wines is aged in French oak for 5 months, the rest is in stainless steel on the fine lees for 8 months. Total production is 15,000 bottles.
Palate: Really beautiful, medium-light bodied wine with some subtle stone fruit and lovely length on the finish. Everytime we pop this bottle in the shop people go crazy for it. Simply delicious!
Recommended Food Pairing: Any fresh Mediterranean dishes would be excellent.
