Vinification: From 15 year old vineyards on clay-limestone soil at over 1000 meters altitude. Hand-harvested, natural yeast fermentation in stone and aged for 11 months in French oak (60% new) and stone lagars carved into the mountains.
Recommended Food Pairing: Duck confit, foie and mushroom terrine, roasted game or venison.
