Nose: Clean, with delicate floral aromas, red fruits, and some toffee.
Palate: Dry, medium-light bodied. Integrated aspects of ripe (yet lean) cherry fruit, with underlying herbaceous and mineral notes. Very polished tannins make the finish smooth and incredibly easy to explore and enjoy.
Vinification: Juan Jesus, who is a professor of enology and viticulture, is also a 4th generation grower in Tenerife, along with his wife, Elena (who has her Masters in Viticulture & enology as well) and are studying and recovering grape varietals that are almost extinct, as of today they have identified 82. Many of their bottles are incredibly limited. Everything is hand-harvested, with indigenous yeasts, in French oak for 6 months.
Recommended Food Pairing: Serve with a slight chill, and drink with carnita tacos or Cuban Ropa Vieja.
