It makes us so happy when someone comes in looking for Bobal. Why? Because although its grown (a lot, honestly) in Spain, yet not on the tip of most wine-drinker’s tongue’s. Which is a shame because of how delicious and really easy to enjoy the wines can be. Historically from around Utiel-Requena/Valencia, this bulbous grape makes a bulk of what gets consumed as simple table wine (remember that little cafe you had “the best wine ever!” in a small town that you’ve forgotten the name of? It was probably Bobal).
“GOT” (meaning glass in Valencian) is a new one to NYC - (because that is relatively easy to do in this dry region) and then aged in clay amphorae for 4 months. Delightful, unfiltered, medium-bodied with smooth tannins and notes of dark berries, spice, and silky texture. As versatile with a roasted chicken as it is a traditional *Paella Valenciana* and makes everyone around the table happy.
