Bodega Cueva, down near Valencia, dates back to the 18th century and has never known anything but natural winemaking and farming practices. Mariano Taberner harvests the oldest vines possible (30/60 years). Bodega Cueva is certified organic, and the wines are native yeast fermented, unfined, unfiltered and without added sulfur. The only intervention is that Mariano plays music to his wine! This wine is a little funky, a little fresh, and served with a slight chill makes a great party wine (think Glou-Glou style) while also being great with anything from brisket tacos to sausage pizza with broccoli rabe.
