Nose: Absolutely haunting, with aromas of almonds, citrus peel, and almost something resembling pheromones.
Palate: Ridiculous. This sherry is packed with umami: salty, lean, taught, surly; like a hot matchstick put out in a pool of bone marrow. A virtual “gobstopper” of flavors and emotions.
Vinification: A rare, limited older bottling of Palo Cortado from historic sherry producer Barbadillo. Originates from old American oak barrels nestled in traditional criaderas that date back over 100 years and a minimum of 30 years old. Despaña is one of the first places in the US to carry this legendary sherry and it is strongly urged not to be missed. Only 6 (6-packs) came over from Spain.
Recommended Food Pairing: Toro (tuna belly), crispy pork belly, even a blend of wild mushrooms (trumpet, maitake, shiitake) grilled with shavings of parmesan and black truffle.
