Nose: Enticing, with subtle saline-praline aromas - faintly confectionary but alluring.
Palate: The maximum expression of a biological aging is an Amontillado VORS. Because of the extended years of its life as a Manzanilla, the acidity is much higher here - you can feel the sharp blade running along your tongue. This is a precise and direct, and incredibly old, wine. This was the star of the lineup when we tasted it, so profoundly expressive and irresistible.
Vinification: A rare, limited older bottling from historic sherry producer, Barbadillo. Originates from old American oak barrels nestled in traditional criaderas that date back over 100 years and a minimum of around 40 years old. Despaña is one of the first places in the US to carry this legendary sherry and it is strongly urged not to be missed. Only 6 (6-packs) came over from Spain.
Recommended Food Pairing: Hard aged cheeses, Jamón Iberico Bellota (of course), as well as very umami Asian dishes that have both noodles/mushrooms/and a fish-type sauce. Or simply on its own, as a world-class nightcap sitting by a cozy fire.
