Barbadillo Manzanilla "Caca de Verano En Rama" 2018
Many people don't know that Barbadillo was the first Bodega in Jerez to begin bottling and selling their sherries as "En Rama' (aka unfiltered). Before that it was often filtered for asthetic reasons of clarity, but stripping out some of the incredible flavors of Manzanilla. Bottled directly from the oldest butts in the solera, four times a year. This wine is on average 8-years-old, bottled unfiltered & produced from estate-owned fruit sourced from vineyards in Gibalbín and Santa Lucía. 100% Palomino Fino. Deep golden with brilliant reflections and aromas of chamomile, apple and floral notes. Dry. Medium-bodied with intense saline & briny flavors on a long, persistent finish. Serve chilled (but not too cold on this one) and have with just about anything savory, especially Jamón Ibérico.
