Palate: Dry, clean yet not too shrill with acidity. Balanced with softly foamy bubbles and a nice toasty accent.
Vinification: Made by the brother and sister team of Agustí and Lali Torelló Sibill, as well as Agustí’s son, Agustí Torelló Roca. This a Catalan sparkling wine produced in the Penedès region, labeled under the Clàssic Penedès DO. The grapes come from organically grown vines over 30 years of age located in the heart of the Penedès DO. Following the Champenoise method, the grapes completed secondary fermentation in the bottle and the resulting wine was aged for a period of 18 months. Total amount of RS is 4.5 grams/liter.
