Nose: Clean, fragrant, violet-like florals and brambly blue and purple fruits, this wine has an air of freshness and finesse.
Palate: Dry, plush and supple and bathed in smoky dark cherry fruit flavors. Impressive complexity and delicious.
Vinification: Vines are all estate-owned and around 80 years old. Treaded by feet followed by barrel fermentation with the stems. There is then a short post-fermentative maceration, malolactic fermentation in French oak barrels for 12 months and 12 months in the bottle before release. Practicing Organic & Biodynamic farming. Only 3,000 bottles made.
Recommended Food Pairing: Roasted duck with crispy skin and fried potatoes. Juicy grilled burgers with a chunky salsa and plenty of avocado.
