Nose: Clean. Medium-intense. Rich & aromatic with notes of honey, vanilla, dill & a bit of hazelnut.
Palate: Dry. Full-bodied. Lush baking spice flavors with a round mouth feel. An elegant, long finish.
Vinification: From a single vineyard planted in granitic soil, made from native varietals. Spontaneously fermented with indigenous yeasts & aged on its lees for 1 year. From a winemaker who uses the best of traditional & modern winemaking methods & is partially responsible for the revitalization of artisanal wine making in Ribiero; producing some of Spains finest white wines. Very small production, only about 3,000 bottles.
Recommended Food Pairing: Chicken in a creamy sauce.
