One of our favorite producers 4-Monos, aka “the four monkeys” are 4 friends that met while hiking the GR-10 trail (hence the name of this cuvee). A combination of Albillo, Moscatel, and other regional varieties from vineyards in Cadalso de los Vidrios and San Martín de Valdeiglesias (Gredos mountains). Grapes were hand-harvested, cold-macerated whole cluster for 6 hours, pressed and wild yeast fermented in steel tank and barrel for 40 days, then raised in neutral 300 liter barrels for 6 months. This is a fresh white wine with lovely aromatics and delicious drinkability. Great with chicken, sushi, and all types of light fare.
